Ah, tofu! That's in the pot. The cubes you see towards the right are pickled Asian...mmmm...kinda somewhere between a radish and a turnip. They cleanse the palate and if you happen upon a particularly vicious pepper, the vinegar provides some relief.ryokan wrote:Do I see some silken tofu here as well (white cubes perhaps)? :hum:

Ah, are you perhaps referring to daikon - giant, white radishes - luo buo in Korea?FBM wrote:Ah, tofu! That's in the pot. They're very popular in Japan, and are especially used in miso soup, but are served pickled (takuan) as well.

Yes! Exactly! Only they're called 무 in Korean (pronounced: moo). They show up in lots of dishes, but I also like to eat them raw. *gasp* Japanese miso is a watered-down version of Korean 청국장 (chung gook jahng) or 된장 (dwen jahng). If you imagine a 3x or 4x more concentrated flavor, you've got the Korean version. Damn, I'm gettting hungry now.ryokan wrote:Ah, are you perhaps referring to daikon - giant, white radishes - luo buo in Korea?FBM wrote:Ah, tofu! That's in the pot. Boy, then I should try some - I love rice&barley miso! Especially if added some nice wakame or nori - very delicious.FBM wrote:Yes! Exactly! Only they're called 무 in Korean (pronounced: moo). I'm no sure whether chung gook jahng can be bought here at all, though - Japanese cuisine, thanks to Michio Kushi (and his macrobiotics movement) is much more popular in Europe -it's a trend here, so to speak. He even came several times here and gave some lectures on art of chewing.

You might be able to find concentrated miso in a thick disc about the size of a large-ish hockey puck. If so, just cut the amount of recommended added water by 2/3 or so, and you should be in business. I'm not sure if the Japanese add these small shellfish to miso or not. Here, it's cooked with a couple of quarter-sized clam/shellfish/something. Delish!!!

As a matter of fact I have some concentrated (barley) miso at home albeit Japanese version.
And no, I'm not joking! According to their philosophy, each bite should be chewed at least 50 times, (preferably 80!), which means the amount of time required for every meal doubles and you end up chewing all day long like bovines.
I even heard some stories of people being so brainwashed by it that it literary killed them - Kushi was actually (relatively speaking) moderate in his ideas - the founder of macrobiotics, George Ohsawa was a bit crazy, to say the least.

At pawiz' PM request, the recipe for the chicken stew dish in the pic above:

2 cups water
3 tbs soy sauce
Wash the chicken and put them into a pot about 12 inch depth)
Prep potatoes, onion, hot pepper, scallion, and carrot into bite size. (pref. 2 * 2)
Get a medium size bowl and mix all of the sauce ingredients. (no lump !!!)
Then place 2 + 3 into 1 and stir them well
Place the pot on a stove in medium heat setting
When it starts to boil then cover and reduce heat to simmer for about 20-30 mins. (stirring occasionally)
Serve with a glass of Chianti ( or you can try korean so-ju)
