I think my favourite cheese is probably Brie. But it should be a nice old one where the crust has some resistance and the centre almost pours out - especially if I roast it a little and serve with fresh baked bread, onion chutney and port.
Second place is a peppered soft cheese like La Boursin au poivre. Not a lot of choice around for them, but when I find them I buy them.
3rd place goes to some old crumbly cheddar. Can't go wrong with it! It's almost comfort cheese for every occasion, except maybe cheese cake! Sometimes simple cheese and crackers is just what the heart desires!

Try melting some blue cheese in a half-hollowed tomato, the cut surface first sprinkled generously with freshly ground black pepper. Wrap it all together in folio and bake well in a charcoal grill. Goes especially well with meat grilled on same...

Bella - next time you are in London - "Maxwell's" just off Covent Garden do a very good blue cheese angus burger. 1/2 lb of meat, cooked beautifully. YUMMY!

Depends on how powerful a punch you want from the taste.
